Hope you are getting to spend some precious time with your family and friends.

I have so much to be thankful for this year. I’m thankful for every single person in my life. There are so many people that have truly blessed me this year. I’m thankful for my health and the health of all my loved ones. I’m thankful to have a warm bed at night and food on the table. But most importantly I’m thankful for a Savior that is faithful, no matter how undeserving I am.

I’m currently out of town visiting family for Thanksgiving.

Thanksgiving Recipes:: Pumpkin Chocolate Chip Cake

I promise that this will be the last pumpkin recipe I share.

Each person in our family always contributes either a dessert or side dish for our Thanksgiving meal. I made this pumpkin chocolate chip cake recently for my work Thanksgiving lunch. It’s super yummy so I think I will make it for our Thanksgiving meal tomorrow as well. You can’t have Thanksgiving without something pumpkin right?

The recipe is from Satisfy My Sweet Tooth. I’ve included it below in case you want to try and make your own!
Pumpkin Chocolate Chip Cake
Ingredients::
1 1/2 cups flour
3/4 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. ground ginger (I didn’t have any ginger, so mine was sans ginger and still tasted delicious)
1 cup canned pumpkin (not pie filling)
1 cup sugar
1/2 cup canola oil
2 large eggs
1 bag semi-sweet chocolate chips
Instructions::
  1. Preheat oven to 350 and position rack in center of oven. Grease 9- or 10-inch springform pan. Cut piece of parchment paper to line bottom of pan and grease the parchment.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and ginger.
  3. In a large bowl, with an electric mixer, beat pumpkin, sugar and oil until well combined. Add eggs. Add 2 cups of the chocolate chips.
  4. Pour batter into prepared pan. Bake 35 minutes or until toothpick inserted into center comes out clean.
  5. Cool in pan on wire rack for 20 minutes then remove from pan and cool completely on rack.
  6. Place remaining chocolate chips into a microwave-safe bowl and microwave in one minute increments stirring in between until completely melted. Pour melted chocolate over cooled cake and spread evenly.
  7. Enjoy
